To all the lovers of my baked goods:
Keeping your cakes, cookies, breads etc fresh for a longer period of time like on the day they were baked, is very easy.
Whether your cake, bread, muffins.... are Gluten free or made from regular wheat, what you need to do is simply put them in an airtight tupperware in the freezer and not in the fridge.
The freezer keeps them fresh, while the fridge hardens them and they become too hard to eat.
Before eating the slice of cake or bread.....take it out of the freezer until it goes back to room temperature. For better results however, take the slice of bread straight out of the freezer and toast it. This will make it taste fresh moreover, if you feel like indulging yourself spread a little butter on the bread. A small twist will make a big difference.
The smell of the bread or cake being baked or toasted is soothing and nourishing to the soul.
But then again, my Love for baking is another subject that I will dedicate a whole entry in my blog for.

Loving baking..........
One of the most enjoyable things while baking or trying a new recipe is looking forward to the end result.Will the cake rise?Are the cookies chewy? Is the bread going to taste good.While waiting and snatching a glimpse into the oven,there is the smell too that fills the kitchen and the house.
I have been baking for many years and it's a passion I have that is very close to my heart.Each recipe has a story and each story is special.I even built wonderful friendships through my baking.
The encouraging and heartwarming words and comments that I get from friends and customers are priceless.They make me want to always improve,invent and learn.
My customers love my baked goods,my Gluten Free customers love my baked goods even more.My passion to bake for them and give them what they can't get from the market is even greater.I know their appreciation is always overwhelming and their gratitude is very touching.

What is Celiac or what does a Gluten free Allergy mean?
This post is for friends,family and anyone who doesn't know what Celiac is or what The Gluten Allergy means?
Please rememeber that there are people who choose to go on a Gluten Free Diet,just because it is a healthier way of eating,others have the Gluten Allergy ONLY and don not get sick if they cheat or eat something that has wheat in it,BUT people who have the Celiac Disease CANNOT have Gluten in any form,mainly WHEAT,BARLEY,RYE,SPELT,KAMUT,WHEAT, STARCH,SEMOLINA,MODIFIED FOOD STARCH........ and all other ingredients that have certain additives and stabilizers in them that people who have Celiac are sensitive to.
So what is Celiac?
Celiac is a digestive disease that damages the small intestine and interferes with the absorption of nutrients from food.People who have celiac cannot tolerate gluten,a protein found in wheat,rye and barley.Gluten can also be found in medicine,vitamins and many other daily products that people are not aware of.That's why reading labels is a MUST for people who have Celiac.
Celiac disease is both a disease of malabsorption- meaning nutrients are not absorped properly- and an abnormal immune reaction to gluten.

What are the SYMPTOMS?
The symptoms may vary from person to person.
Abdominal bloating or pain
Chronic Diarrhea
Vomiting
Constipation
Weight Loss

Celiac is also more common among people with other genetic disorders including Down Syndrome,Turner Syndrome,a condition that affects girls development.Celiac is also common in Autistic Chidren.
How is Celiac diagnosed?
Recognizing Celiac can be difficult because some of its symptoms are similar to those of other disease like irritable bow syndrome,iron deficiency,intestinal infections and chronic fatigue syndrome.
If the Doctor suspects that a eprson has Celiac a Blood test will be done and a biopsy of the small intestine.
How is Celiac treated?
The only treatment for Celiac is a gluten free diet.The Doctor will ask the person to work with a dietition .The dietition will will teach the person how to read ingredient lists and identify foods that contain gluten.
A person with Celiac should not eat most grain,pasta,Cereal and many processed foods.
The gluten free diet requires a completely new approach to eating.
Nowadays people with Celiac have a wide range of foods,deserts,breads,pasta and cereals that are made from rice flour,soya flour,buckwheat or bean flours that taste great and are very healthy even for the people who don't have celiac or the gluten free allergy.

Gluten Free Ginger Bread
The problem in baking a new recipe,is having to try it and end up eating a few pieces of the cake or a few cookies or even the whole cake.
Today I tried a new sweet bread "GF Ginger Bread" recipe.Even before it cooled,the smell was so good,I cut a piece to try,ended up eating the whole peace.
The smell of Ginger and Cinnamon together is just devine and very inviting.
So now the first peace of the cake is gone,too tempting to leave it sitting outside on my kitchen counter :( so the Ginger bread headed to the freezer for another day.
But before it made its way to the freezer I cut a few slices and gave them to one of my customers who had ordered a loaf of GF Bread.
Like any success at ones work, when baking a new recipe,if the result is fruitful,it is very uplifting and rewarding.
Another victory :)

Date,Pecans,Chocolate Gluten Free slices
A new recipe created by Areej
This recipe is very tasty,very easy and not too sweet.
My recipes are going to be withdrawn from the different cultures and countries I lived in.This recipe has dates in it that come from Saudi or the UAE.I started appreciating the goodness of Dates since we moved to the Gulf, good quality dates are found in abundance here and there is also the commercial kind,which is good too.There is also date syrup which can be added to many recipes instead of sugar.Dates have uncountable health benefits,it is affluent in natural fibres,they are also the best nourishment for muscle development.Dates fight constipation,intestinal disorder,weight gain and heart problems.Dates can be incorporated in many desert recipes,the paste of dates can be mixed with milk or yoghurt.
Dates benefits are endless,but let's start with a simple and very tasty recipe.
200g butter
100g light brown sugar
2 eggs
zest of 1 orange
3 cups (350g) rice flour
2 tablespoons corn flour
Extra rice flour might might be needed while mixing ingredients to form a soft dough
250g pitted,chopped dates
1 cup chopped pecans
1tsp butter
200g dark chocolate (Lindt 70% cocoa)
2 tbs cream
Mix first 6 ingredients together to make a soft dough,wrap in cling film and refrigerate for at least 1 hour.
Mix,chopped dates,chopped pecans and 1 tsp butter together,set aside.
Put a small casserole on the stove on low heat, mix chocolate with 2 tbsp cream until chocolate disolves and mixes with cream.
Preheat oven at 175 C.
Butter an 8 inch square pan .
Take out dough from the fridge,roll half the dough on a rice floured surfaced,put in pan,put on top the date mixture then the chocolate mixture,add the rest of the dough.sprinkle some chopped pecans on top of dough,put in the oven for 45 minutes.
Remove,leave to cool ,cut into squares and ENJOY the fragrance and the taste of the delicious slices with a cup of coffee or tea.

New gluten free recipe
This cookie recipe is old and new,old because I've been baking these cookies for years,new because I keep changing the recipe by
adding,removing........ingredients as I go along.
The cookies are delicious,they melt in your mouth and you can add whatever dried fruits you like,add chocoltae chips and that will make it even more delightful and luscious.
Recipe:
200 g butter
3/4 c (150g) brown sugar
zest of 1 orange
2 eggs
3 c (450g) rice flour
1 tsp cinnamon
1/2 tsp baking soda
1/2 c dried cranberries
1/2 c dried chopped apricots
1/2 c chopped walnuts or slivered almonds
200 g semi sweet chocolate chips
Add the first 4 ingredients to a mixing bowl and mix well,gradually add the rice flour,BS and cinnamon,mixing well after each addition,untill all the ingredients come together.Finally stir in the dried fruits, nuts and chocolate chips until all is mixed well together.
Wrap the mixture in cling film,put in the refrigerator for at leat 1 hour.
Put oven on medium temperature,put small spoonfuls of the mixture on a tray covered with parchment paper.
Cook in oven for 12 min.
Cookies must look cooked from outside, but soft to the touch from the inside.
Mouthwatering on the first day,but even more scrumptious the following days.
